Ingredients
- 2 cups milk (2% or full cream)
- 2 tablespoons butter
- 1/2 cup sugar
- Pinch of salt
- 3 eggs
- 3 tablespoons cornstarch, heaped
- Pinch of cinnamon sugar
- Pinch of coconut
- 1 graham cracker pie shell
Instructions
- Preheat oven to 350F.
- Rinse pot with cold water. Add butter, sugar and pinch of salt to milk. Bring milk to a boil, turn to low.
- Beat eggs very well in a separate container. Have at the ready.
- Combine cornstarch with a little extra milk to dissolve and have at the ready.
- Once milk is boiling, add maizena mixture in a slow stream, stirring until it resembles a thick porridge (not too thick). Add well beaten eggs in a slow stream and whisk briskly, until all melded together.
- Pour mixture into pie shell and immediately sprinkle with cinnamon sugar. Bake 15-20 mins. Sprinkle with coconut once it comes out of the oven.
