South African Milk Tart

Ingredients

  • 2 cups milk (2% or full cream)
  • 2 tablespoons butter
  • 1/2 cup sugar
  • Pinch of salt
  • 3 eggs
  • 3 tablespoons cornstarch, heaped
  • Pinch of cinnamon sugar
  • Pinch of coconut
  • 1 graham cracker pie shell

Instructions

  1. Preheat oven to 350F.
  2. Rinse pot with cold water. Add butter, sugar and pinch of salt to milk. Bring milk to a boil, turn to low.
  3. Beat eggs very well in a separate container. Have at the ready.
  4. Combine cornstarch with a little extra milk to dissolve and have at the ready.
  5. Once milk is boiling, add maizena mixture in a slow stream, stirring until it resembles a thick porridge (not too thick). Add well beaten eggs in a slow stream and whisk briskly, until all melded together.
  6. Pour mixture into pie shell and immediately sprinkle with cinnamon sugar. Bake 15-20 mins. Sprinkle with coconut once it comes out of the oven.
